Ingredients & Substitutions
- Chicken Tenders - This smaller cut of chicken is the perfect size for your wrap and cooks up quickly. You can also cut a chicken breast into 3 long strips.
- Southwest Spice Blend - This blend is made from chili powder, chipotle powder, smoked paprika, cumin, garlic powder, and salt. It is a little spicy, but if you don’t want spice, you can swap the chipotle powder for chili powder. If you don’t have garlic powder, you can also use onion powder.
- Olive Oil – Olive oil helps to cook and season the chicken. If you don’t have olive oil, any oil or melted butter will work.
- Chipotle Ranch Dressing - This homemade sauce is made with sour cream, mayo, canned chipotle chili peppers, ranch seasoning, and water. If you don’t feel like making a homemade sauce, you can also use a store-bought sauce or chipotle mayo.
- Corn - You can use frozen corn and canned corn.
- Cheese - You can use a Mexican cheese blend, cheddar cheese, Monterey Jack cheese, or a Pepper Jack cheese for an extra kick of spice.

How to Make Southwest Chicken Wrap
Step 1 | Make Southwest Chicken
Mix together the olive oil and seasoning in a bowl. Place the chicken tenderloins on a baking sheet. Pour the olive oil mixture over them, tossing until each piece is fully coated. Bake for 15-18 minutes.
Step 2 | Make Chipotle Ranch Dressing
Add ingredients into a blender or food processor and blend until smooth.
Step 3 | Assemble the Wrap
Lay a tortilla flat. Add the wrap ingredients. Fold to create a wrap. Slice in half, and serve with the extra chipotle ranch dressing for dipping.
Tips & Notes
Avoid Overloading the Wrap: Adding too much filling can make it hard to roll up and rip the tortilla.
Customize the Spice Level: This wrap is a little spicy with the chicken and chipotle ranch. To get rid of the spice completely, use regular ranch and swap out the chipotle chili powder for regular chili powder.
Make It Ahead of Time!
Prep: The chicken and dressing can be made ahead of time. They will keep it in the fridge for up to four days. Cut the bell peppers and red onion and store them in separate containers.
Assemble: make your wrap the day of, and store it in the fridge until ready to eat.

Ingredients
Southwest Chicken
- 1 ½ tablespoon olive oil
- ½ teaspoon table salt
- ½ teaspoon chipotle powder
- ½ teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- 1 - 1 ¼ pounds chicken tenders you can also cut chicken breast cut into 3 long vertical strips*
Chipotle Ranch Dressing
- ½ cup sour cream
- ¼ cup mayonnaise
- 2 chipotle peppers in adobo sauce * NOT the entire can
- 1 tablespoons ranch seasoning or dip mix
- ¼ cup of water

- 4 flour tortillas
- 1 Bell peppers cut into strips
- ⅛ Red onion cut into strips
- ½ cup frozen corn thawed
- ½ cup black beans drained and rinsed
- 1 cup shredded cheddar cheese
- 1 avocado sliced
- 1 pound Southwest Chicken
- ½ to ¾ cup Chipotle Ranch
Instructions
Southwest Chicken
- Preheat the oven to 375°F.
- Mix together the olive oil, salt, chipotle powder, chili powder, smoked paprika, cumin, and garlic powder in a bowl.
- Place the chicken tenderloins on a baking sheet. Pour the olive oil mixture over them, tossing until each piece is fully coated.
- Bake for 15-18 minutes, or until the chicken reaches an internal temperature of 165°F.
Chipotle Ranch Dressing
- Add ingredients into a blender or food processor and blend until smooth.
Southwest Chicken Wrap
- Lay a tortilla flat. Add a few strips of bell pepper, some red onion, a about 2 tablespoons of corn and black beans, and about ยผ cup of shredded cheddar cheese. Add slices of cooked Southwest Chicken, avocado, and top with the chipotle ranch dressing.
- Fold in the sides of the tortilla, then roll from the bottom to create a wrap.
- Slice in half, and serve with the extra chipotle ranch dressing for dipping.
