½cupsour cream
¼cupmayonnaise
2chipotle peppers in adobo sauce* NOT the entire can
1tablespoonsranch seasoning or dip mix
¼cupof water

1Bell pepperscut into strips
⅛Red onioncut into strips
½cupfrozen cornthawed
½cupblack beansdrained and rinsed

Instructions
Southwest Chicken
Preheat the oven to 375°F.
Mix together the olive oil, salt, chipotle powder, chili powder, smoked paprika, cumin, and garlic powder in a bowl.
Place the chicken tenderloins on a baking sheet. Pour the olive oil mixture over them, tossing until each piece is fully coated.
Bake for 15-18 minutes, or until the chicken reaches an internal temperature of 165°F.
Chipotle Ranch Dressing
Add ingredients into a blender or food processor and blend until smooth.
Southwest Chicken Wrap
Lay a tortilla flat. Add a few strips of bell pepper, some red onion, a about 2 tablespoons of corn and black beans, and about ¼ cup of shredded cheddar cheese. Add slices of cooked Southwest Chicken, avocado, and top with the chipotle ranch dressing.
Fold in the sides of the tortilla, then roll from the bottom to create a wrap.
Slice in half, and serve with the extra chipotle ranch dressing for dipping.
