Potatoes O'Brien- I used frozen Potatoes O’Brien for convenience and flavor. Substitute them with frozen hash browns or diced potatoes if you don't have them.
Ground Turkey- I chose it because it is a lean, versatile protein perfect for a healthy Tex-Mex breakfast. Depending on your preference, you can swap it for ground beef or chicken. The turkey soaks up the spices, making this a flavorful and juicy dish.
Seasoning- A blend of dried oregano, chipotle chili powder, garlic powder, and salt gives this dish its signature Tex-Mex kick. Adjust the chipotle chili powder to your heat preference, or add some red pepper flakes for extra spice.
Eggs- You can use more eggs or just egg whites for extra protein.
Cheddar Cheese – Sharp cheddar adds a creamy, melty finish. You can also use Monterey Jack or a Mexican blend for variety.
Salsa or Hot Sauce- Optional but recommended. A bit of salsa or hot sauce adds a fresh, spicy flavor.

- Avoid Overcooking the Eggs: One common mistake is overcooking the eggs, making them rubbery. To avoid this, remove the skillet from the heat just before the eggs are fully set; they will continue to cook slightly as they cool.
- Spice Level: If you are worried about this being too spicy, only use ½ teaspoon of chipotle chili powder. Or, if you want to avoid the spice altogether, you can use regular chili powder.

Ingredients
- 1 28oz bag Ore-Ida Potatoes O'Brien
- 3 tablespoons olive oil
- 1 pound ground turkey 93% lean
- 1 ½ teaspoon dried oregano
- ½ - 1 teaspoon chipotle chili powder see notes
- 1 teaspoon garlic powder
- ½ teaspoon table salt
- 8 large eggs
- 1 cup cheddar cheese
- salsa or hot sauce optional
Instructions
- Preheat your oven to 425°F (220°C). Spread the frozen Potatoes O'Brien evenly on a large sheet pan. Toss with 3 tablespoons of olive oil, ensuring they're well coated. Bake for 35 minutes, or until the potatoes are golden and starting to brown. Toss them halfway through cooking. Once done, season with salt to taste and divide the potatoes among your meal prep containers.
- While the potaotes cook, lightly spray a large skillet with oil and heat over medium heat. Add the ground turkey, breaking it into smaller pieces as it cooks.
- Once the turkey is browned and any excess liquid has evaporated, stir in the oregano, chipotle chili powder, garlic powder, salt, and 2 tablespoons of water. Cook for an additional minute until the water evaporates. Transfer the cooked turkey to your meal prep containers.
- In a large bowl, whisk together the eggs, seasoning with salt and pepper to taste. Lightly spray the same skillet with oil and heat over medium heat. Pour in the whisked eggs and gently stir with a rubber spatula, scraping the bottom of the pan until the eggs are just cooked through. Divide the scrambled eggs among your meal prep containers.
- Top each portion with shredded cheddar cheese. Allow the scramble to cool slightly before placing the containers in the refrigerator. Enjoy within four days, and serve with your favorite salsa or hot sauce if desired.
