Tex Mex Turkey Scramble Meal Prep is the perfect start to your morning. You get smokey chipotle ground turkey, crispy potatoes, and fluffy eggs topped with gooey cheddar cheese and your favorite salsa!

128oz bagOre-Ida Potatoes O'Brien
3tablespoonsolive oil
1poundground turkey93% lean
1 ½teaspoondried oregano
½ - 1teaspoonchipotle chili powdersee notes
1teaspoongarlic powder
½teaspoontable salt
8large eggs
1cupcheddar cheese
salsa or hot sauceoptional
Instructions
Preheat your oven to 425°F (220°C). Spread the frozen Potatoes O'Brien evenly on a large sheet pan. Toss with 3 tablespoons of olive oil, ensuring they're well coated. Bake for 35 minutes, or until the potatoes are golden and starting to brown. Toss them halfway through cooking. Once done, season with salt to taste and divide the potatoes among your meal prep containers.
While the potaotes cook, lightly spray a large skillet with oil and heat over medium heat. Add the ground turkey, breaking it into smaller pieces as it cooks.
Once the turkey is browned and any excess liquid has evaporated, stir in the oregano, chipotle chili powder, garlic powder, salt, and 2 tablespoons of water. Cook for an additional minute until the water evaporates. Transfer the cooked turkey to your meal prep containers.
In a large bowl, whisk together the eggs, seasoning with salt and pepper to taste. Lightly spray the same skillet with oil and heat over medium heat. Pour in the whisked eggs and gently stir with a rubber spatula, scraping the bottom of the pan until the eggs are just cooked through. Divide the scrambled eggs among your meal prep containers.
Top each portion with shredded cheddar cheese. Allow the scramble to cool slightly before placing the containers in the refrigerator. Enjoy within four days, and serve with your favorite salsa or hot sauce if desired.
Notes
If you are worried about this being too spicy only use ½ teaspoon of chipotle chili powder. Or if you want to avoid the spice all together you can use you can use regular chili powder.
