Ingredients & Substitutions
Ingredients & Substitutions
Black Beans- They add a rich, creamy texture. You can use pinto beans or kidney beans if you prefer.
Corn– You can use either fresh or frozen (and defrosted) corn.
Red Bell Pepper- Adds a vibrant color and sweet, crisp flavor. Yellow or orange bell peppers work just as well.
Red Onion- Gives the salad a bit of sharpness and crunch. Green onions or shallots can be used for a milder taste.
Jalapeños- Adds a spicy kick. Use two if you like it hot, and include the seeds for extra heat. Omit if you prefer no spice.
Cilantro- Omit if you’re not a fan of cilantro.
Lime Juice- Brightens up the flavors and adds a zesty tang. Lemon juice can be used if you don’t have a lime.
Olive Oil- Forms the base of the dressing, adding richness and helping the flavors meld together. Any neutral oil like avocado or canola oil would make a good substitute.
Spices- We use a combination of cumin, chili powder, salt, smoked paprika, and garlic powder for that southwest flavor.
