black beans,
drained and rinsed

corn, drained
(or 2 cups fresh/frozen corn, cooked)

red bell pepper
diced
½
red onion
finely chopped
2
jalapeño
seeded and finely chopped
¼
cup
fresh cilantro
chopped

tablespoons
olive oil
Juice of 1 limes
about 2 tablespoons

teaspoon
chili powder
½
teaspoon
smoked paprika
½
teaspoon
garlic powder
½
teaspoon
salt
plus more to taste

teaspoon
ground cumin
Instructions
In a large mixing bowl, combine the black beans, corn, red bell pepper, red onion, jalapeño (if using), and cilantro.
In a small bowl, whisk together the lime juice, olive oil, ground cumin, chili powder, salt, and pepper.
Pour the dressing over the salad and toss until all the ingredients are well coated.
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Give the salad a good toss before serving.
Notes
This salad can be served as a side dish or used as a topping for tacos, burritos, or grilled meats.
