Ingredients
Salmon Fillets: fresh or frozen, just remember to remove the skin
Low Sodium Soy Sauce: needs to be low sodium otherwise the sauce will be too salty
Rice Vinegar: rice vinegar is sweeter and milder vinegar
Brown Sugar: helps to balance the soy sauce and vinegar and will also caramelize the salmon
Garlic and Ginger: classic teriyaki flavors
Black Pepper: adds a little spice
Cornstarch: helps to thicken up the teriyaki sauce
How to Make Teriyaki Salmon Bites
1. Make Marinade: In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, minced garlic, minced ginger, black pepper, and cornstarch.
2. Cut Salmon: Pat salmon dry with a paper towel. Cut the skin off the filet, then cut the salmon into 2-inch cubes.
3. Marinate Salmon: Place the salmon in a small bowl with ½ of the marinade. Gently toss until the salmon is coated in the marinated. Let sit for 10 to 15 minutes.
4. Cook Salmon: Pre-heat your air fryer to 400F. Place the marinated salmon in the air fryer basket, leaving space in between each piece. Cook for 6-8 minutes or until the edges of each cube start to brown.
5. Make Teriyaki Sauce: While the salmon is cooking, add your remaining marinade to a small skillet over medium heat. Stir occasionally. Cook for 5 minutes or until it starts to thicken. Then remove it from the heat.
6. Make Bowls: To assemble the bowls, add 1 cup of rice, ½ cup of broccoli, and ¼ of the salmon bites. Top the salmon with teriyaki sauce, sliced green onions, and sesame seeds.
Directions for the oven
- Preheat your oven to 375F. Follow steps 1-3 in the recipe card below.
- Skip steps 4 and 5. Spray a large sheet pan with non-stick spray. Add your marinated salmon to a sheet pan and bake for 5-7 minutes.
- Continue with steps 6-7.
What to eat with your Salmon Bites
- Add them to a bowl of rice with veggies.
- Throw them in a wrap with sticks of carrots, zucchini, peppers, and scallions.
- Toss them into a salad. There are a ton of teriyaki salad kits you can add the salmon too.
Tips
- Make sure you use low-sodium soy sauce. If you use regular soy sauce, the salmon will be way too salty.
- Every air fryer is different. Cook times will vary. Check the salmon every few minutes the first time you make this. You'll want the salmon to be a little darker around the edges, but pull the bites out before they burn.

We could eat this everyday! In fact, we made this last night for the first time and we're making it again tonight. I could see us trying variations of this with chicken, beef, or shrimp. Excellent wirh rice and veggies. We also tried with baked sweet potatoes and it was very good.
