I used an American teriyaki sauce for this recipe which includes soy sauce, vinegar, garlic, ginger, sugar, and cornstarch. Authentic Japanese teriyaki sauce has soy sauce, mirin, sugar, and sake.

🧀 Ingredients & Substitutions
Low-Sodium Soy Sauce: You must use low-sodium soy sauce, regular soy sauce will be way too salty.
Rice Vinegar: Rice vinegar is slightly sweeter and more flavorful than white vinegar, but white vinegar can be used as a substitute.
Corn Starch: Mix your corn starch with 2 tablespoons of water, so it doesn't clump up in your sauce. If you don't have cornstarch, you can use four. You'll need 2 tablespoons to help thicken the sauce.
Brown Sugar: ⅓ cup of brown sugar helps balance the salty and savory flavors without making the dish too sweet.
Ground Turkey: I used 94% lean ground turkey. The higher fat content makes it easier to crumble the meat. You can also use ground chicken or lean ground beef.
Broccoli Florets: Make sure to cut the florets small so they cook quickly, don’t include the thick stems of the broccoli.
Matchstick Carrots: Save time by buying already-cut carrots.

🔪 How to Make Ground Turkey Teriyaki
Cook Rice: Cook rice as directed. If you are sensitive to salt, don’t add any to your rice. The saltiness of the teriyaki sauce may be enough.
Make Sauce: Combine the soy sauce ingredients together and set aside.
Brown Meat: Cook ground turkey over medium heat until brown.
Add Veggies & Teriyaki Sauce: Add your vegetables to the pan and cook for 3 minutes, then add teriyaki sauce and cook for 4-6 more minutes.
Make a Bowl: Add 1 cup of rice and ¼ of the ground turkey teriyaki to a bowl.

If you are sensitive to salt, don’t add salt to your rice. The teriyaki sauce should be enough to season it, and if it’s not, you can always add a pinch of salt to your meal.

Ingredients
Homemade Teriyaki Sauce
- ½ cups low sodium soy sauce
- ⅓ cup rice vinegar
- ⅓ cup brown sugar
- 1 tablespoon corn starch mixed with 2 tablespoons water
- 3 cloves garlic cloves minced
- 1 tablespoon ginger minced
Turkey Teriyaki Rice Bowl
- 5 cups cooked rice
- 1-2 tablespoon oil any kind, like vegetable or olive oil
- 1 pound ground turkey 94/6
- 2 cups broccoli florets fresh
- 1 red bell pepper sliced thinly
- 1 cup matchstick carrots
- chopped green onions for garnish

Instructions
- Cook rice as directed on packaging*.
- To make the sauce** combine low-sodium soy sauce, rice vinegar, brown sugar, cornstarch slurry, minced garlic, and ginger together in a bowl. Set aside while you cook the meat.
- Heat oil in a large skillet over medium heat. Once the oil is hot, add ground turkey to the pan and cook until brown. You should have time to chop the bell pepper and broccoli while the meat cooks.
- Once the turkey has browned, mix in broccoli, bell pepper, and carrots. Cook for 3 more minutes, mix often.
- Mix in the sauce. Scrape the bottom of the pan. Simmer for 4-6 minutes or until the sauce has thickened.
- Add ¼ of the rice and ground turkey teriyaki to a bowl. Garnish with green onions.
