Pork Sausage- Use 1 pound of your favorite pork sausage. I love using Jimmy Dean's original or sage sausage for extra flavor.
Sharp Cheddar Cheese- Adds a rich, cheesy taste. Sharp cheese gives you a stong cheese flavor. Mild cheddar cheese is too weak and will be overpowered by the sausage.

How to Make Sausage Balls Without Bisquick
Step 1 | Mixing Sausage Balls
Mix all ingredients in a large bowl with your hands until just blended. If the dough seems too dry and the flour isn’t mixing in well, let it rest for 5 minutes and try mixing again. Shape the mixture into 36 1-inch balls.
Step 2 | Form Balls & Bake
Place the sausage balls on a nonstick baking sheet or a cookie sheet with parchment paper. Bake for 13-16 minutes or until golden brown and the internal temperature of 160°F.
Tips
- If it seems like no more flour will mix into the sausage, let it rest for 5 minutes and mix again. This allows the flour to absorb some of the moisture from the sausage, making it easier to combine.
- If there is still a little bit of flour left in the bowl (¼ cup or less), don't worry about it. Move on to roll your sausage ball mixture.
- You can use a medium cookie scoop to make uninformed cheesy sausage balls.
Variations
Sage Sauage- I love using sage sausage in this recipe, but when I can't find it, I add 1 tablespoon of subbed sage to regular sausage.
Spicy Sausage Balls- Use spicy or hot sausage and mix in ½ teaspoon red pepper flakes.
How to Make Sausage Balls Ahead of Time!
These sausage and cheese balls are perfect for busy holiday schedules and can be prepped beforehand. Here's how you can prepare and store them so they're ready whenever you need a tasty snack or appetizer.
1. Preparing
Mix all the ingredients together and shape the sausage mixture into balls.
2. Store
If you plan on making these the next day, store the uncooked sausage balls in a large bowl covered in plastic wrap. The next day, bake them at 375F for 13-16 minutes.
3. Freeze
If you don't need the sausage balls for some time, place the uncooked shaped sausage balls on a lined baking sheet in the freezer for about 1-2 hours or until they are firm. Once frozen, transfer the sausage balls to a resealable plastic bag or airtight container. Label the bag with the date and contents.
When you’re ready to make them, bake them at 375F for 18-20 minutes or until they are cooked and reach an internal temperature of 160°F. There is no need to defrost them.

- 2 cups Sharp Cheddar Cheese Grated

- Add sausage and cheese

- Shape into 30-36 (1-inch) balls.
