Instructions
- Add the ground chicken, salt, paprika, oregano, garlic powder, onion powder, and black pepper to a bowl. Mix just until combined, don't overwork it. Do your best to form an even patty, or roll the mixture into a ball, place it into your skillet, and gently press it flat with an oiled spatula or parchment paper.
- Heat a 12-inch skillet over medium-high heat. Add the oil, and let it heat up for a few minutes. Then set the patties in the pan. Cook for 3-4 minutes without moving them, until a golden crust forms. Flip and cook for another 3 minutes, or until the internal temperature reaches 165°F. If they need more time, cover the skillet and cook for an additional 1-2 minutes, adjusting the heat as needed.
- During the last minute of cooking, top each patty with a slice of Cheddar so it melts.
- While the burgers cook, toast the buns and stir together all the ingredients for the special sauce.
