1poundground chicken92% lean
½teaspoonsalt
½teaspoonpaprikasmoked or sweet
1teaspoondried oregano
¼teaspoongarlic powder
¼teaspoononion powder
¼teaspoonblack pepper
2tablespoonsavocado oilor another high smoke point oil
4slicesCheddar cheese
4burger buns
Toppings: lettuce, pickles, tomato slices
Special Sauce
¼cuplight mayonnaise
1tablespoonsdill pickle relish
1tablespoonsketchup
2teaspoonsyellow mustard
½teaspoonpaprika
½teaspoononion powder
½teaspoongarlic powder
Instructions
Add the ground chicken, salt, paprika, oregano, garlic powder, onion powder, and black pepper to a bowl. Mix just until combined, don’t overwork it. Shape the mixture into four ½-inch-thick patties.Note: Ground chicken can be soft and sticky. Do your best to form an even patty, or roll the mixture into a ball, place it into your skillet, and gently press it flat with an oiled spatula or parchment paper.
Heat a 12-inch skillet over medium-high heat. Add the oil, and let it heat up for a few minutes. Then set the patties in the pan. Cook for 3–4 minutes without moving them, until a golden crust forms. Flip and cook for another 3 minutes, or until the internal temperature reaches 165°F. If they need more time, cover the skillet and cook for an additional 1–2 minutes, adjusting the heat as needed.
During the last minute of cooking, top each patty with a slice of Cheddar so it melts.
While the burgers cook, toast the buns and stir together all the ingredients for the special sauce.
