Turkey Teriyaki Rice Bowl
5cupscooked rice
1-2tablespoonoilany kind, like vegetable or olive oil

1red bell peppersliced thinly

Instructions
Cook rice as directed on packaging*.
To make the sauce** combine low-sodium soy sauce, rice vinegar, brown sugar, cornstarch slurry, minced garlic, and ginger together in a bowl. Set aside while you cook the meat.
Heat oil in a large skillet over medium heat. Once the oil is hot, add ground turkey to the pan and cook until brown. You should have time to chop the bell pepper and broccoli while the meat cooks.
Once the turkey has browned, mix in broccoli, bell pepper, and carrots. Cook for 3 more minutes, mix often.
Mix in the sauce. Scrape the bottom of the pan. Simmer for 4-6 minutes or until the sauce has thickened.
Add ¼ of the rice and ground turkey teriyaki to a bowl. Garnish with green onions.

*If you are sensitive to salt, don’t add any to your rice. The saltiness from the teriyaki sauce may be enough.**If using store-bought sauce, add 1 cup of sauce and 2 tablespoons of water to the pan, and mix. Add that to the pan and cook for 4 minutes or until the sauce is thick and the vegetables are cooked.
