This 30-minute Ground Turkey Teriyaki Rice Bowl is savory, filling,  and tasty. You can make the teriyaki sauce or use store-bought sauce.

Ingredients

Homemade Teriyaki Sauce

  • ½ cups low sodium soy sauce
  • cup rice vinegar
  • cup brown sugar
  • 1 tablespoon corn starch mixed with 2 tablespoons water
  • 3 cloves garlic cloves minced
  • 1 tablespoon ginger minced

Turkey Teriyaki Rice Bowl

  • 5 cups cooked rice
  • 1-2 tablespoon oil any kind, like vegetable or olive oil
  • 1 pound ground turkey 94/6
  • 2 cups broccoli florets fresh
  • 1 red bell pepper sliced thinly
  • 1 cup matchstick carrots
  • chopped green onions for garnish

Instructions

  • Cook rice as directed on packaging*.
  • To make the sauce** combine low-sodium soy sauce, rice vinegar, brown sugar, cornstarch slurry, minced garlic, and ginger together in a bowl. Set aside while you cook the meat.
  • Heat oil in a large skillet over medium heat. Once the oil is hot, add ground turkey to the pan and cook until brown. You should have time to chop the bell pepper and broccoli while the meat cooks.
  • Once the turkey has browned, mix in broccoli, bell pepper, and carrots. Cook for 3 more minutes, mix often.
  • Mix in the sauce. Scrape the bottom of the pan. Simmer for 4-6 minutes or until the sauce has thickened.
  • Add ¼ of the rice and ground turkey teriyaki to a bowl. Garnish with green onions.

Notes

*If you are sensitive to salt, don’t add any to your rice. The saltiness from the teriyaki sauce may be enough.
**If using store-bought sauce, add 1 cup of sauce and 2 tablespoons of water to the pan, and mix. Add that to the pan and cook for 4 minutes or until the sauce is thick and the vegetables are cooked.
