BBQ Chicken Flatbread Pizza makes for a fun weeknight dinner or party appetizer. These take about 40 minutes to make (including cooking the chicken), but you can prep all the ingredients ahead of time for a quick and simple meal.

Quick Overview
Time: 40 Minutes in total – about 15 minutes to prep the ingredients, 10 minutes to cook the chicken, and 15 minutes to assemble and bake the flatbreads.
Ingredients: chicken breast, oil, seasoning, BBQ sauce, mozzarella, red onion, bell pepper, and cilantro.
Ease: Pretty simple! Great for busy weeknights, and even easier if you prep the toppings and use leftover or rotisserie chicken.

- Chicken Breast – You can also use chicken thighs, leftover cooked chicken, or rotisserie chicken.
- Seasoning – I used a blend of smoked paprika, garlic powder, onion powder, salt, and pepper to complement the BBQ flavors. Use can also use your favorite seasoning blend or stick with salt and pepper.
- Flatbreads – I used Stonefire flatbreads, but you can substitute four naan breads for two large flatbreads. You could also use pita bread or even pre-baked pizza crusts.
- BBQ Sauce – use your favorite store-bought sauce, or make your own like my 10-Minute Sweet & Spicy Chipotle BBQ Sauce!
- Red Onion – Thinly sliced red onion adds a nice bite. If you’re not a fan, try thinly sliced green onions or shallots for a milder flavor.
- Bell Pepper – love the crunch and color bell peppers add! You can swap them for poblano peppers or banana peppers.
- Cilantro – If you’re not into cilantro, you can skip it or replace it with chopped parsley. But if you do like cilantro, it adds a fresh pop that works really well with the BBQ flavors.

How to Make BBQ Chicken Flatbreads
Step 1 | Cook the Chicken
Season diced chicken with smoked paprika, garlic powder, onion powder, salt, and pepper, then cook in olive oil over medium-high heat for 7–10 minutes until fully cooked.
Step 2 | Assemble Your Flatbreads
Place flatbreads on a baking sheet, brush with BBQ sauce, then top with mozzarella, red onion, bell peppers, and cooked chicken.
Step 3 | Bake
Bake for 10–13 minutes until golden and bubbly, then garnish with cilantro, drizzle with extra BBQ sauce if desired, and slice each flatbread into thirds, then cut each section in half diagonally.
Tips
Cut the Veggies Thin – Slice the red onion and bell peppers very thin so they soften slightly and cook through in the oven.
Dice the Chicken Small – Smaller pieces of chicken make the flatbreads easier to eat and ensure you get a bit of everything in each bite.
Make It Ahead of Time!
Prep: You can cook the chicken and slice the veggies up to 1 day ahead of time. Store everything in separate containers in the fridge, so when it’s time to eat, all you have to do is assemble and bake.
Freezing: You can assemble the flatbreads ahead of time and freeze them! Place the assembled flatbreads on a baking sheet and freeze until solid, then wrap them tightly in plastic wrap and foil.
When ready to eat, bake from frozen at 400°F for 15–18 minutes or until heated through and the cheese is melted.
Reheating: These flatbreads are best baked just before serving, but leftovers reheat well in the oven or air fryer at 350°F for about 5–7 minutes, until warmed through and crisp again.

- 1 lb chicken breast cut into very small bite-sized pieces
- 1 tablespoon olive oil
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Flatbreads
- 2 flatbreads I used Stonefire flatbreads
- ⅓ cup BBQ sauce plus more for drizzling
- 2 cups shredded mozzarella
- 1 red bell pepper thinly sliced
- ⅛ small red onion thinly sliced
- ¼ cup chopped cilantro
Instructions
- Preheat your oven to 400°F.
- Season the diced chicken with smoked paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 7-10 minutes, stirring occasionally, until fully cooked.
- Place the flatbreads on a baking sheet.
- Brush each flatbread with a thin layer of BBQ sauce. Sprinkle mozzarella evenly over the flatbreads, then top with as much sliced red onion, bell peppers, and cooked chicken as you want.
- Bake for 10-13 minutes, or until the flatbreads are golden brown and the cheese is melted and bubbly.
- Garnish with chopped cilantro and a drizzle of extra BBQ sauce, if desired. Slice and serve warm.
