This sourdough brie grilled cheese with bacon is the best thing to make for dinner. It has creamy brie, sharp cheddar cheese, savory bacon, and perfectly toasted sourdough bread.
Spread ¼ tablespoon of butter on one slice of bread. Set the bread, butter side down, on a plate. Top with 1 ½ oz of brie, 2 slices of bacon, and 2 tablespoons of cheddar cheese. Top the sandwich wiht another slice of buttered bread.
Repeat to make another sandwich.
Set a skillet over medium low heat. Once hot, add your sandwiches. Cook until the bread is golden brown. Flip and cook the other side until it’s golden brown.
Serve immediately.
Notes
Cooking bacon in the oven is much easier than on the skillet. Preheat your oven to 400F. Line a baking sheet with parchment paper. Lay the bacon slices on it, don't overlap the bacon. Bake for 10 to 20 minutes. Transfer the bacon to a paper towel-lined plate.
