Ingredients
Chipotle Chicken Wraps
½cupchipotle saucehomemade or store-bought
1 ⅓cupschopped lettuce
1cucumbercut into thin sticks
½pintcherry tomatoesquartered
1avocadosliced
¼cupchopped cilantro
4large tortillas
3cupsshredded chicken
Homemade Chipotle Sauce - Makes about 1 ⅓ cups
½cupranch dressing
⅓cuplight mayonnaise
2chipotle peppers in adobo sauce
Juice of 1 lime
2garlic clovesor ½ teaspoon garlic powder
Instructions
Make the chipotle sauce. Add the ranch, mayonnaise, chipotle peppers, lime juice, and garlic to a blender. Blend until smooth. If the sauce is too thick, add water 1 teaspoon at a time until it reaches your desired consistency.
Prep the vegetables. Chop the lettuce, cut the cucumber into thin sticks, quarter the tomatoes, slice the avocado, and chop the cilantro.
Assemble the wraps. Lay the tortillas flat. Divide the shredded chicken, lettuce, cucumber, tomatoes, and avocado evenly among the 4 tortillas. Top each wrap with 1 tablespoon of cilantro and 2 tablespoons of chipotle sauce.
Fold and serve. Fold the sides of each tortilla toward the center, then roll it up tightly like a burrito. Cut each wrap in half and serve.
