½lb.sweet or spicy Italian sausagecasings removed
½mediumoniondiced
1bell pepperdiced
½cuppepperonicut into fourths (about 3oz)
2clovesgarlicminced
1tablespoonItalian seasoning
½teaspoonred pepper flakesoptional
6oztomato paste
¾lb.short pastalike campanelle, rotini, or penne
4cupschicken broth
1½cupsshredded mozzarella cheese
Grated Parmesan cheesefor garnish (optional)
Instructions
In a large Dutch oven or pot, cook the sausage, onion, and bell pepper over medium heat. Break the sausage into bite-size pieces as it cooks, and sauté until the sausage is browned and the vegetables are soft, about 7–8 minutes.
Stir in the pepperoni, garlic, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute. Then stir in the tomato paste until it coats the meat and vegetables evenly.
Pour in the chicken broth and add the pasta. Stir well, then increase heat to high and bring to a boil.
Once boiling, reduce heat to medium, cover, and simmer for 10-12 minutes, stirring occasionally to prevent sticking, until the pasta is al dente and most of the liquid is absorbed. Tip: If the pasta absorbs all the liquid before it's done, stir in ¼ cup of water or broth and cook for a few more minutes.
Remove from heat and stir in 1 cup of mozzarella cheese. Taste and season with salt if needed.
Sprinkle the remaining ½ cup mozzarella on top, along with extra red pepper flakes or Parmesan, if desired. Cover and sit for 1–2 minutes for the cheese to melt, then serve warm.
Notes
Pasta Doneness: If the pasta isn’t tender after 15–17 minutes, continue cooking and check every 2–3 minutes.
