Caesar Wraps
2cupschopped chickenrotisserie or homemade*
3cupsRomaine lettucechopped
⅔cupcherry tomatoeshalved
¼cupshaved Parmesan cheese
½cupcroutonscrushed if preferred
⅔cupCaesar dressingplus more for serving
4large flour or whole wheat tortillas
Caesar Dressing (1 cup)
3tablespoonslemon juiceabout 1 lemon
⅓cupmayonnaise
1teaspoonDijon mustard
4oil-packed anchovy filletsfinely chopped
1large clove garlicgrated or minced
¼cupolive oil
¼cupgrated Parmesan cheese
salt and pepper to taste
Instructions
Caesar Dressing
In a medium bowl, whisk together the lemon juice, mayonnaise, Dijon mustard, anchovies, and garlic.
Whisk in the olive oil untill combined.
Stir in the Parmesan cheese. salt and pepper to your taste.
Assemble the Caesar Wraps
In a large mixing bowl, toss together the chopped chicken, lettuce, cherry tomatoes, Parmesan, croutons, and Caesar dressing until well combined.
Lay a tortilla flat and place a generous spoonful of the mixture along one edge.
Roll up tightly, burrito-style, tucking in the sides as you go. Secure with toothpicks if needed.
For best flavor, refrigerate for 20 minutes before serving (optional).
Serve with extra dressing on the side.
Notes
Homemade Chopped Chicken
Preheat Oven to 400F.
Season 2ish pounds of chicken breasts with salt, pepper, onion powder, and garlic powder. Lightly coat with oil.
Bake for 30-35 minutes or until the internal temperature reaches 165°F.
Let the chicken rest before chopping into bite-sized pieces.

Make Caesar dressing (stores for 5 days).
Cook chicken (stores for 4 days).
Cut tomatoes (stores for 3 days).
Assemble:
Build your wrap in the morning and refrigerate (best within 24 hours). Keep croutons separate and add before eating for crunch!
