These juicy Ground Chicken Burgers are slathered in Buffalo sauce and topped with tangy whipped goat cheese, lettuce, and tomatoes.

Buffalo Chicken Burgers
1lbground chicken92% lean
⅓cuppanko breadcrumbs
3tablespoonbuffalo sauce+ more for serving
1tablespoonavocado oil or vegetable oil
4burger buns

Whipped Goat Cheese
2ozsoft goat cheeseroom temperature
1½tablespoonplain Greek yogurt
½tablespoonolive oil
½clovegarlicminced

Instructions
Combine the goat cheese, Greek yogurt, olive oil, garlic, and a pinch of salt in a food processor or mixing bowl. Blend with a food processor or an electric mixer until smooth and creamy. If the mixture is too thick, add a teaspoon of water to loosen it.
In a bowl, combine the ground chicken, panko breadcrumbs, and buffalo sauce. Mix just until combined, don’t overwork the meat.
Divide the mixture into 4 portions and shape into ½-inch-thick patties.
Ground chicken can be soft and sticky. Do your best to form an even patty, or roll the mixture into a ball, place it into your skillet, and gently press it flat with an oiled spatula or parchment paper.
Heat a large skillet over medium-high heat. Add the oil and let it heat for a few minutes. Add the patties and cook for 4 minutes without moving, until a golden crust forms. Flip and cook for another 4 minutes or until the internal temperature reaches 165°F.
Lightly toast the burger buns in a skillet or toaster until golden.
Spread whipped goat cheese on the buns, then add the burger, lettuce, and tomato and extra buffalo sauce. Serve immediately.
