Ingredients
116-oz canrefried beans
1cupshredded pepper Jack cheesedivided
2ozcream cheesesoftened
2jalapeñosminced with seeds
1tablespoonhot sauceuse your favorite
½teaspoonsmoked paprika
½teaspoonchili powder
¼teaspoononion powder
½teaspoongarlic powder
tortilla chips
Optional toppings: chopped cilantro, chopped tomatoes, queso fresco, or green onions
Instructions
Preheat oven to 350F.
In a large bowl mix together the refried beans, ½ cup of pepper jack cheese, the softened cream cheese, minced jalapeños, hot sauce, and spices.
Spread the dip into an 8-inch cast iron skillet or small baking dish.
Top with the remaining ½ cup of cheese.
Bake for 20 minutes, or until the cheese is melted and bubbly.
Remove from the oven, let cool for a few minutes, and top with your favorite toppings and chips.
Notes
Adjust the heat: Remove the jalapeño seeds for a milder dip or add extra hot sauce for more spice.Soften the Cream Cheese: Cold cream cheese won’t mix smoothly.
