Ingredients
24ozbaby gold potatoes, quartered(half any smaller potatoes)
2tablespoonsolive oildivided
2teaspoonsItalian seasoning
1teaspoonsalt
½teaspoonblack pepper
12ozfully cooked sausagesliced into 1-inch rounds
2red bell pepperscut into chunks
1clovegarlicminced
Grated Parmesanfor serving (optional)
Instructions
Preheat your oven to 400°F.
Add the halved potatoes to a large sheet pan. Drizzle with 1 tablespoon of olive oil, 1 teaspoon of Italian seasoning, salt, and pepper. Toss to coat evenly.
Bake the potatoes for 15 minutes on the center rack.
While potatoes cook, slice the sausage and chop the bell peppers.
After 15 minutes, remove the pan from the oven. Add the sausage, peppers, and minced garlic to the pan. Drizzle with the remaining 1 tablespoon of olive oil and sprinkle with the remaining 1 teaspoon of Italian seasoning. Toss everything with a spatula to combine.
Return to the oven and bake for another 15 minutes, until the potatoes are tender and the sausage is browned.
Optional: Sprinkle with grated Parmesan before serving.

Cut the potatoes evenly: For even roasting, make sure your potato pieces are roughly the same size. Quarter any larger ones so they cook at the same rate as the smaller halves.Customize the seasoning: Italian seasoning gives it a classic roasted flavor, but you can easily swap in Cajun, taco, or your favorite seasoning blend to change things up.Don’t overcrowd the pan: Make sure everything is spread out in a single layer on the sheet pan for best browning.
