3bell peppersstemmed and sliced into strips
8ozmushroomssliced into strips
1onionsliced into strips
2garlic cloves, mincedor ½ teaspoon garlic powder
2tablespoonsolive oil
1teaspoonsmoked paprika
1teaspoonchili powder
½teaspooncumin powder
½teaspoonsalt
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add sliced bell peppers, mushrooms, and onion to the skillet. Sprinkle chili powder, cumin powder, smoked paprika, salt, and onion powder over the vegetables. Stir well to evenly coat the vegetables with the seasoning.
Cook, stirring occasionally, for about 15 minutes or until the vegetables start to soften.
Taste and adjust seasoning if needed, adding more salt if desired.
