Ingredients
Chicken:
1tablespoonolive oil
6boneless skinless chicken thighs* (about 1 ½ pounds)
1teaspoonsmoked paprika
½teaspoonchili powder
½teaspoontable salt
¼teaspooncumin powder
Chili Lime Glaze:
2tablespoonsfresh lime juiceabout 1 limes
1tablespoonhoney
1teaspoonchili powder
½teaspoongarlic powder
½teaspooncrushed red pepper*
¼teaspoonsalt
1tablespoonfresh cilantrochopped
Instructions
In a small bowl, mix smoked paprika, chili powder, cumin, and salt. Season both sides of the chicken thighs with the spice mixture.
Heat olive oil in a large skillet over medium heat. Once hot, add the chicken thighs and cook for 6-8 minutes on each side, until browned and the internal temperature reaches 165°F.
While the chicken cooks, make the honey lime glaze by whisking together honey, garlic powder, lime juice, chili powder, crushed red pepper (if using), and salt in a small bowl.
Once the chicken is cooked, pour the honey lime glaze over the chicken in the skillet. Reduce heat to low and simmer for 1-2 minutes until the sauce thickens and coats the chicken.
Remove the chicken from the skillet, drizzle with any remaining sauce, and sprinkle with chopped cilantro. Serve with rice or your favorite side.
Notes
Trimming Chicken Thighs: Be sure to trim any excess fat from the chicken thighs before cooking for a cleaner texture and to avoid excess grease in the pan.Adjust the Spice: This isn't a really spicy dish. You can add more crushed red pepper for a little more heat.
