yellow onion

red bell pepper

packet
taco seasoning
or 1 batch of Homemade Taco Seasoning

red enchilada sauce

canned black beans
drained and rinsed

corn tortillas

Homemade Taco Seasoning
(if not using a packet)

chili powder

teaspoon
garlic powder

teaspoon
ground cumin
1
teaspoon
smoked paprika

teaspoon
salt

teaspoon
onion powder
½
teaspoon
oregano
Instructions
Preheat oven to 375F.
In a large skillet over medium-high heat, cook the ground beef, onion, and bell pepper until browned. Breaking up the meat as it cooks.
Reduce heat to medium. Add taco seasoning and ¼ cup water. Stir to coat the meat evenly.
Stir in the black beans and 1 ½ cups of enchilada sauce. Remove from heat.
Spread ½ cup of enchilada sauce over the bottom of a 9x13-inch baking dish.
Arrange 6 corn tortillas in a single layer (see post for how to arrange them).
Spread half of the beef mixture evenly over the tortillas.
Sprinkle 1 cup of cheese over the beef mixture.
Repeat with the remaining 6 tortillas, the rest of the beef mixture, and the remaining 1 ½ cups of cheese.
Bake for 20 minutes, until the cheese is melted and the sauce is bubbly.
Let the casserole sit for 10 minutes before slicing. Garnish with fresh cilantro and enjoy!
