One Pot Sausage Jambalaya

Ingredients

  • 1 tbs butter
  • 1 cup of diced green peppers about 1 medium pepper
  • 1 cup of diced onion
  • 1 cup of diced celery
  • 1 lb andouille sausage cooked cut into 1" pieces.
  • 14 oz tomato sauce
  • 14.5 oz can of petite diced tomatoes drained
  • 3 cups of chicken broth
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon of garlic powder
  • 1 ½ cups of rice long grain white uncooked

Instructions

  • Melt butter in large dutch oven over medium- high heat.
  • Add in a green peppers, onions, celery, and sausage. Cook until celery and green peppers or soft and onion is translucent, about 7 min.
  • Add in the rest of the ingredients and stir. Heat to a boil.
  • Turn down to a simmer, cover and cook for 25 min or until rice is done.
  • Salt to taste
