These Air Fryer Teriyaki Salmon Bites are a little sweet and very savory. I added my bites to a bowl with rice and broccoli. This is a meal I could eat every week.
Pat salmon dry with a paper towel. Cut the skin off the filet, then cut the salmon into 2-inch cu
In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, minced garlic, ginger, black pepper, and cornstarch.
Place the salmon in a small bowl with ½ of the marinade. Gently toss until the salmon is coated in the marinated. Let sit for 10 to 15 minutes.
Pre-heat your air fryer to 400F.
Place the marinated salmon in the air fryer basket, leaving space between each piece. Cook for 6-8 minutes or until the edges of each cube start to brown.
While the salmon is cooking, add your remaining marinade to a small skillet over medium heat. Stir it occasionally—Cook for 5 minutes or until it thickens. Then remove it from the heat.
To assemble the bowls, add 1 cup of rice, ½ cup of broccoli, and ¼ of the salmon bites. Top the salmon with teriyaki sauce, sliced green onions, and sesame seeds.
