Greek Marinated Chicken Thighs are simple and easy to make on a weeknight. You can add this chicken to a salad, make it into a sandwich, or just serve it with a side.

Ingredients

  • ½ cup whole-milk plain Greek yogurt
  • 2 tbs lemon juice
  • 2 garlic cloves minced
  • 2 teaspoons dried Greek oregano
  • 1 teaspoon thyme and onion powder
  • ½ teaspoon salt
  • 1.25- 1.5 pound boneless skinless chicken thighs

Instructions

  • In a large bowl or resealable bag, mix together ½ cup of yogurt,  lemon juice, minced garlic cloves, dried Greek oregano, thyme,  onion powder, and salt. Add chicken, covering it in the yogurt mixture. Cover and refrigerate for 1 hour or up to 10 hours.
  • Preheat oven to 400 degrees F. Coat a baking sheet with cooking spray. Fold chicken in half (similar to how it was packaged) and place the chicken in a single layer. Throw away any remaining marinade. Bake until the thickest part of the thighs registers 165 degrees F, about 20-25 minutes.
