Jerk Shrimp with Rice and Beans

- Add coconut milk, water, jerk seasoning, salt, and garlic to a large pot on medium high heat. Bring to boil, add rice. Turn to medium low. Cover and cook for 20 - 30 min. Stir occasionally. Once done remove from heat and fluff with a fork. Mix in beans.
- While rice is cooking, add butter and olive oil in a medium non stick skillet over medium heat. Once butter has melted add in garlic and jerk seasoning. Stir constantly for 1 minute.
- Add in shrimp. Do not over crowed the pan, make shrimp in two batches if necessary. Stir shrimp constantly till they are pink and form a sharp u shape- about 4-5 minutes.
