    I love to travel through food. Even though it 20 degrees and there is a foot of snow outside, I can imagine I'm on a warm sunny beach. The sound of crystal blue waves crashing into the golden sandy shore is in the distance, and I'm enjoying my bowl of Jerk Shrimp with Rice and Beans (or rice and peas as the locals call it).

    Jerk Shrimp with Rice and Beans

    Ingredients

    14 oz light coconut milk 


    ½ cup water


    1 teaspoon jerk seasoning 


    ½ teaspoon salt


    I minced garlic clove


    1 cups of medium grain rice


    7 oz can of red beans 



    1 pound of peeled and deveined Shrimp


    1 tablespoon butter


    1 tablespoon of olive oil


    1 minced garlic clove


    1 tablespoons of jerk seasoning 


    Instructions

     
    1. Add coconut milk, water, jerk seasoning, salt, and garlic to a large pot on medium high heat. Bring to boil, add rice. Turn to medium low. Cover and cook for 20 - 30 min. Stir occasionally. Once done remove from heat and fluff with a fork. Mix in beans.  
    2. While rice is cooking, add butter and olive oil in a medium non stick skillet over medium heat. Once butter has melted add in garlic and jerk seasoning. Stir constantly for 1 minute. 
    3. Add in shrimp. Do not over crowed the pan, make shrimp in two batches if necessary. Stir shrimp constantly till they are pink and form a sharp u shape- about 4-5 minutes.

    • Cook Time: 15 minutes
