Healthy Peanut Butter Banana Muffins

Description

Healthy Peanut Butter Banana Muffins made with coconut flour, oat flour, bananas, and peanut butter to give you a tasty morning treat. They are packed with protein to keep you feeling satisfied throughout the morning.


Ingredients

2 bananas
4 eggs 
1/2 cup honey 
1/3 cup almond milk ( or any milk)
2 tbs olive oil 
1 tsp vanilla
1 1/4 cup oat flour
3/4 cup coconut flour  
1 teaspoon baking soda
1/4 teaspoon salt 
1/2 cup peanut butter   


Instructions

  1. Preheat oven to 350 degrees. Line muffin tin.
  2. In a large bowl, mash bananas. Then mix in eggs, one egg at a time. Mix in almond milk, olive oil, and vanilla extract.
  3. Add in oat flour, coconut flour, baking soda, and salt. Stir till well combined. Then mix in peanut butter.
  4. Fill muffin tin most of the way full, cook for 20-30 minutes. Let cook for 10 minutes.

Notes

Store in an airtight container lined with paper towels at room temperature for three days.
