Healthy Peanut Butter Banana Muffins made with coconut flour, oat flour, bananas, and peanut butter to give you a tasty morning treat. They are packed with protein to keep you feeling satisfied throughout the morning.
1/2 cup honey
1/3 cup almond milk ( or any milk)
2 tbs olive oil
1 tsp vanilla
1 1/4 cup oat flour
3/4 cup coconut flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup peanut butter
- Preheat oven to 350 degrees. Line muffin tin.
- In a large bowl, mash bananas. Then mix in eggs, one egg at a time. Mix in almond milk, olive oil, and vanilla extract.
- Add in oat flour, coconut flour, baking soda, and salt. Stir till well combined. Then mix in peanut butter.
- Fill muffin tin most of the way full, cook for 20-30 minutes. Let cook for 10 minutes.
Store in an airtight container lined with paper towels at room temperature for three days.
