Healthy Peanut Butter Banana Muffins

Healthy Peanut Butter Banana Muffins made with coconut flour, oat flour, bananas, and peanut butter to give you a tasty morning treat. They are packed with protein to keep you feeling satisfied throughout the morning.

Each muffin is packed with over 8 grams of protein to keep you happy thought out your moring. I love having these muffins with my morning coffee. Some times I smear extra peanut butter on them to make them extra tasty.

Ingredients

Banana: Adds moisture, sweetness, and tons of flavor. 
Eggs: Provides a ton of protein to these muffins.
Honey: Gives the muffins a sweet touch
Almond Milk (or any milk): Adds moisture to the muffins, any milk will do!
Olive Oil: Ensures the muffins don’t come out dry
Vanilla: Adds flavor
Oat Flour: Great flavor and texture
Coconut Flour: Adds sweetness and a hearty texture
Baking Soda: But you don’t want it to be too hearty
Salt: Brings out all the flavors
Peanut Butter: Star of the show, adds protein and flavor.

Oat flour is the easiest alternative flour to make at home. I blend old fashion oats in a blender till I get a flour consistency. It’s so easy.

You can substitute regular flour for the oat flour, but I would not recommend replacing the coconut flour. Coconut flour absorbs liquid like crazy, so switching it with another flour would make for an overly liquidy batter.

Any nut butter would work in place of peanut butter. 

Store in an airtight container lined with paper towels at room temperature for two days or in the fridge for four days.

Ingredients

2 bananas
4 eggs 
1/2 cup honey 
1/3 cup almond milk ( or any milk)
2 tbs olive oil 
1 tsp vanilla
1 1/4 cup oat flour
3/4 cup coconut flour  
1 teaspoon baking soda
1/4 teaspoon salt 
1/2 cup peanut butter   


Instructions

  1. Preheat oven to 350 degrees. Line muffin tin.
  2. In a large bowl, mash bananas. Then mix in eggs, one egg at a time. Mix in almond milk, olive oil, and vanilla extract.
  3. Add in oat flour, coconut flour, baking soda, and salt. Stir till well combined. Then mix in peanut butter.
  4. Fill muffin tin most of the way full, cook for 20-30 minutes. Let cook for 10 minutes.

Notes

Store in an airtight container lined with paper towels at room temperature for three days.
