Ground Chicken Chorizo

Ground Chicken Chorizo tastes just like Mexican pork chorizo but is a little healthier. It’s great on tacos, quesadillas, eggs, and so much more.

Ingredients

  • 1 pound ground chicken
  • 3 tablespoons red wine vinegar
  • 1 tablespoon smoky paprika
  • 1 tablespoon ancho chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, mix the ground chicken, red wine vinegar, and spices until everythign is well mixed together.
  2. Heat oil in a large skillet over medium heat. Once the oil is hot, add the meat, breaking it into small pieces.
  3. Cook until all the liquid has evaporated and the chicken has cooked through for about 9 minutes.
