- 3 tbsp butter
- 1 medium onion, diced (about 2 cups)
- 2 carrots, sliced (about 1/2 cup)
- 2 garlic gloves minced
- 1 ½ tbsp. of Italian Seasoning
- 15 oz crushed tomatoes
- 28 oz of whole tomatoes
- 2 cups chicken broth
- 1/2 cup half and half
- Salt and Pepper
Instructions
- Melt butter in a large soup pot over medium heat. Add onion and carrots, stir frequently. Cook till onion is soft and translucent. Add garlic and Italian seasoning, cook for 1 minute.
- Add crushed tomatoes, whole tomato's, and broth. Bring to a boil then reduce to a simmer. Cover and cook for 30 min.
- Remove from heat and let cool. In small batches blend till smooth in a blender. Transfer soup back into the pot. Add half & half, and salt and pepper to taste.
