    Breakfast Quesadillas stuffed with turkey sausage, onion, peppers, scrambled eggs, and cheese. Crunchy on the outside, warm and gooey on the inside.  Breakfast Quesadilla are a sure-fire way to cure your Monday morning blues. Also great for breakfast meal prep!

    It is no secret that I am a huge quesadilla fan. One sure-fire way to make my weekday blue go away is to put this crispy, gooey, spicy breakfast quesadilla in front of me in the morning. This is one of my favorite breakfast recipes. These breakfast Quesadilla consist of yummy turkey sausage, Mexican blended cheese, a scrabbled egg, savory spices, and a pepper & onion blend. Plus it all comes together in less than 30 min and clean up is a breeze!

    Some tips to make your life 100X easier

    1. Use a frozen onion and pepper mix. It's a much cheaper alternative in the winter when bell peppers are out of season. Also, less dished to clean.
    2. Salsa is optional, but really we all know its a necessity.
    3. These are an AMAZING breakfast to meal prep. They only have 420 calories and take no time at all to warm up in the morning.

    Breakfast Quesadillas stuffed with turkey sausage, onion, peppers, scrambled eggs, and cheese. Crunchy on the outside, warm and gooey on the inside.  Breakfast Quesadilla are a sure fire was to cure your Monday morning blues. Also great for breakfast meal prep!

    • Total Time: 30 minutes
    • Yield: 5 Quesadilla 1x

    Ingredients

    Scale
    • 1 12oz bag of frozen peppers and onions mix
    • ½ teaspoon of paprika
    • 1 teaspoon of cumin
    • ½ teaspoon of garlic powder
    • ½ ld. of turkey sausage
    • 5 eggs
    • 1 ¼ cups of Mexican cheese blend
    • 5 taco sized tortillas
    • Salt and Pepper
    • Salsa (optional)

    Instructions

    • Cook onions and peppers as directed on packaging. Carefully drain out any excess liquid. Mix in paprika, cumin, garlic powder and ¼ teaspoon of salt. Set aside. 
    • Cook turkey sausage in a large skillet over medium-high heat. Set aside.
    • Scramble 5 eggs in a bowl. Spray large skillet with non cook spray. Cook eggs on medium heat. Salt and pepper eggs once they are about 80% done cooking. Continue cooking till eggs are done. Set aside. 

    If you are making the quesadillas now:

    Heat tortilla on a large skillet over medium heat for 30 seconds. Flip over.  On half of the tortilla sprinkle 2 tablespoons of cheese, ⅕ of the scrambled eggs , ⅕ of the onion & pepper mixture, and ⅕ of the sausage. Top that with 2 more tablespoons of cheese. Fold tortilla in half.  Once the side on the skillet starts to brown, flip the quesadilla over. Once that side starts to brown, its done!

    If you are making the quesadillas later:

    Layout one tortilla.  On half of the tortilla sprinkle 2 tablespoons of cheese, ⅕ of the scrambled eggs , ⅕ of the onion & pepper mixture, and ⅕ of the sausage. Top that with 2 more tablespoons of cheese. Fold tortilla in half. Assemble the other 4 quesadilla and pile them on a large microwave safe plate. Microwave for 30 seconds, or until cheese is slightly melted, just enough to help the quesadilla stick together.  Refrigerate till your ready to eat them. When you are ready, warm a large skillet on medium heat. Place quesadilla on skillet. Once the side on the skillet starts to brown, flip the quesadilla over. Once that side starts to brown, its done!
